BRIEF INFORMATION

«Pamidi is one of the main varieties of Thrace.» This characteristic red grape, featuring rosé pearls. This special variety with an appropriate winemaking protocol is ideal for the production of rosé wines with a rich aromatic character. The whole vinification is based on the few extraction process to obtain the ideal amount of pigments to produce a very gentle wine in the shade of the ‘saumon’. The wine appears with a dry and aromatic mouth simultaneously, good acidity with a solid flavor structure. Its finish is pleasant and of good duration.

Appearance

Bright clear saumon color.

Bouquet

Nose with dominant aromas of strawberry & cherry.

Taste

Moderate acidity, good structure in general. Fruity mouth that combine red fruits and flowers. Cool flavor complements its attractive color.

VINIFICATION

Vinification begins with a slight pressure on the pneumatic press so that we can keep the color of the light rosé. Then the alcoholic fermentation is at a controlled temperature to preserve the aromas and freshness in stainless steel tanks. It is followed by complete digestion and maturing for at least 2 months before bottling.

The vineyards are located in Avdira, at the southeastern end of the Protected Geographic Indication area.
