BRIEF INFORMATION

Pamidi is one of the main varieties of Thrace, a characteristic red grape that also features rosé pearls. This special variety, with suitable vinification is ideal for the production of rosé wines with rich aromatic character. The whole vinification is based on the extraction process, to obtain the ideal number of pigments, in order to produce a very gentle wine in the shade of the “saumon”. The wine appears with a dry and aromatic mouth, at the same time, and good acidity with a solid flavor structure. Its finish is pleasant and of good duration.

Bright, clear saumon color

 

Bouquet

Nose with dominant aromas of strawberry and cherry.

 

Taste

Moderate acidity and good structure in general. Fruity mouth, that combine red fruits and flowers. Cool flavor that complements its attractive color.

 

VINIFICATION

The vinification begins with a slight pressure on the pneumatic press, so that we can maintain the light rosé color. Then, the alcoholic fermentation is done at a controlled temperature, in stainless steel tanks, to preserve the aromas and the freshness. It is followed by complete digestion and maturation for at least two months before bottling.

The vineyards are located in Avdira, at the southeastern end of the Protected Geographic Indication area.
