The golden softness of the new

The indigenous Greek white variety of Greece is one of the strongest cards of the Vourvoukeli estate. Grown in one of the oldest vineyards in the world, it ripens with the breeze of the Thracian Sea, giving a special aroma to the wine with rich acidity and mineral character. The label on the bottle bears the form of a lively and cute rabbit (Lepus europaeus), which is a protected species of the wider area of the Vistonida lagoon.
The reason for this choice ? in the vineyard of Assyrtiko, these friendly animals are taking daily walks, deservedly winning the leading role on the label.

Bouquet

A pure bouquet with herbal aromas (lemongrass), notes of plants, and citrus.

 

Taste

A dry taste with a high level of acidity, a chalky sensation with earthy notes, and a beautiful aftertaste.

 

VINIFICATION

Vinification after cold extraction, static debourbage, and fermentation of the clear must at a controlled temperature of 16-18°C. The wine stays with its wine lees, to result in a greater body in the end. The long duration of alcoholic fermentation takes place in stainless steel tanks. Completion of alcoholic fermentation is followed by a period of bâtonnage, lasting several months.
